Ingredients
- 2 cups sugar
- 1 cup canola oil
- 4 large eggs
- 2 cups all-purpose flour

- 2 cups shredded carrots
- 1 container (16 oz) cream cheese frosting
- 16 oz Ghirardelli white chocolate melting wafers
Instructions
- Preheat oven to 350°F and prepare a 9×13-inch baking dish with nonstick spray.
- In a stand mixer, beat sugar, oil, and eggs until smooth. Gradually add flour, baking soda, baking powder, salt, and cinnamon; mix until just combined.
- Fold in shredded carrots and pecan chips. Pour batter into the baking dish and bake for 30–40 minutes until a toothpick comes out clean.
- Let cool completely; crumble into fine crumbs. Add cream cheese frosting gradually until dough forms.
- Roll mixture into balls and place them on a cookie sheet; chill for 1 hour.
- Melt white chocolate in a double boiler over low heat. Dip each truffle in melted chocolate and sprinkle with reserved pecans.
