Ingredients

  • 2 cups sugar
  • 1 cup canola oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 cups shredded carrots
  • 1 container (16 oz) cream cheese frosting
  • 16 oz Ghirardelli white chocolate melting wafers

Instructions

  1. Preheat oven to 350°F and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a stand mixer, beat sugar, oil, and eggs until smooth. Gradually add flour, baking soda, baking powder, salt, and cinnamon; mix until just combined.
  3. Fold in shredded carrots and pecan chips. Pour batter into the baking dish and bake for 30–40 minutes until a toothpick comes out clean.
  4. Let cool completely; crumble into fine crumbs. Add cream cheese frosting gradually until dough forms.
  5. Roll mixture into balls and place them on a cookie sheet; chill for 1 hour.
  6. Melt white chocolate in a double boiler over low heat. Dip each truffle in melted chocolate and sprinkle with reserved pecans.
  7. Allow truffles to set before serving.
