  • 2.53 lbs Yukon gold potatoes
  • 1/4 cup butter
  • 1 medium onion
  • 810 cloves garlic
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 3/4 cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Thinly slice cleaned Yukon gold potatoes and set aside.
  3. In a saucepan, melt butter over medium heat. Sauté diced onion and minced garlic until soft.
  4. Stir in flour to form a roux. Gradually add milk, chicken broth, thyme, and salt; cook until thickened.
  5. Remove from heat and mix in cheeses until combined.
  6. Grease a casserole dish and layer potatoes with cheese sauce three times, finishing with sauce on top.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake another 35–45 minutes until golden brown and tender.
  8. Let cool for about 10 minutes before serving.
