  • 4 pounds russet potatoes, peeled and sliced into ¼-inch pieces
  • 2 cups grated cheddar cheese
  • 1 (10.75-ounce) can condensed cheddar soup
  • 1 (12-ounce) can evaporated milk
  • ½ cup milk
  • ½ teaspoon garlic powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium-high heat, brown the ground beef with the diced onion; season with salt and pepper. Drain excess fat.
  3. Layer half of the sliced potatoes in the baking dish, then top with half of the beef mixture and cheese. Repeat layers.
  4. In a mixing bowl, whisk together the cheddar soup, evaporated milk, milk, and garlic powder until smooth. Pour over the layered casserole.
  5. Cover with foil and bake for 60 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
