  • 45 pounds bone-in chicken thighs (or chicken breasts)
  • ⅓ cup olive oil
  • ½ cup orange juice
  • ¼ cup fresh lime juice
  • ¼ cup chopped cilantro
  • ½ cup chopped yellow onion
  • 3 cloves garlic (diced)
  • 2 ounces achiote paste
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 1 tablespoon ground coriander
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle chile pepper

Instructions

  1. Combine all marinade ingredients in a blender and blend until smooth.
  2. Place chicken in a ziplock bag or airtight container and pour marinade over it; ensure chicken is well coated.
  3. Marinate in the refrigerator for at least 4 hours (up to 24 hours).
  4. Preheat grill to medium-high heat (425-450°F). Grill chicken for about 5-7 minutes per side until cooked through (165°F for breasts, 175°F for thighs).
  5. Let rest for 5 minutes before slicing and serving.
