- 7 oz full-fat coconut milk (unsweetened)
- 1 cup chicken stock
- ½ cup red onion (diced)
- 2 garlic cloves (minced)
- 1 tablespoon ginger (grated)
- Juice of 1 lime
- ½ teaspoon red pepper flakes
- Salt and black pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. In a large skillet, heat one tablespoon of coconut oil over medium-high heat. Cook the chicken for 5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add another tablespoon of coconut oil and sauté diced onion for 3-5 minutes until soft. Add minced garlic and ginger; cook for an additional minute.
- Pour in chicken stock, lime juice, red pepper flakes, salt, and black pepper; bring to a boil. Reduce heat and simmer for about 5 minutes.
- Stir in the coconut milk and simmer for another 5 minutes before adding a mixture of arrowroot powder and water to thicken the sauce.
- Return the chicken to the pan, cooking in the sauce for an additional 5-7 minutes until cooked through.
