Description

Ingredients

  • 500 g skinless boneless salmon fillets
  • 15 g fresh herbs (dill, parsley, or chives)
  • 1 lemon (zest only)
  • 1 tsp garlic powder
  • 1 medium egg
  • 4 tbsp plain flour
  • Salt and pepper
  • 12 tsp milk
  • 50 g peas (defrosted)
  • Olive oil
  • 300 ml natural yogurt
  • 1/2 cucumber (grated)
  • 1 clove garlic (crushed)
  • Lettuce and burger buns for serving

Instructions

  1. In a food processor, chop the salmon into bite-sized pieces. Add fresh herbs, lemon zest, garlic powder, egg, flour, salt, and pepper. Pulse until just combined.
  2. Stir in defrosted peas and enough milk to form a thick batter.
  3. Heat olive oil in a frying pan over medium heat. Shape the mixture into four patties and cook each side for about 8-10 minutes until golden brown.
  4. For the tzatziki dressing, mix natural yogurt with grated cucumber and crushed garlic in a bowl until well combined.
  5. Serve the cooked salmon patties on buns with lettuce and drizzle generously with tzatziki sauce.
