- 500 g skinless boneless salmon fillets
- 15 g fresh herbs (dill, parsley, or chives)
- 1 lemon (zest only)
- 1 tsp garlic powder
- 1 medium egg
- 4 tbsp plain flour
- Salt and pepper
- 1–2 tsp milk
- 50 g peas (defrosted)
- Olive oil
- 300 ml natural yogurt
- 1/2 cucumber (grated)
- 1 clove garlic (crushed)
- Lettuce and burger buns for serving
Instructions
- In a food processor, chop the salmon into bite-sized pieces. Add fresh herbs, lemon zest, garlic powder, egg, flour, salt, and pepper. Pulse until just combined.
- Stir in defrosted peas and enough milk to form a thick batter.
- Heat olive oil in a frying pan over medium heat. Shape the mixture into four patties and cook each side for about 8-10 minutes until golden brown.
- For the tzatziki dressing, mix natural yogurt with grated cucumber and crushed garlic in a bowl until well combined.
- Serve the cooked salmon patties on buns with lettuce and drizzle generously with tzatziki sauce.
