- ½ cup potato starch
- ¼ cup all-purpose flour
- ¼ cup extra spicy gochujang
- ¼ cup ketchup
- 3 garlic cloves (minced)
- ¼ cup rice syrup
Instructions
- Season the chicken by patting dry and rubbing with a mix of salt, garlic powder, black pepper, and cayenne. Dry brine in the refrigerator overnight or for at least one hour.
- Prepare the Yangnyeom sauce by sautéing minced garlic in oil, then adding ketchup, gochujang, rice syrup, soy sauce, sugar, vinegar, and gochugaru. Stir and simmer for a few minutes before setting aside.
- In two separate bowls, mix dry batter ingredients and wet batter ingredients (including egg and cold club soda).
- Coat each chicken piece first in the wet batter and then in the dry batter.
- Heat oil in a deep pot to 350°F and fry the chicken in batches for about 6–7 minutes until golden brown.
- For extra crispiness, fry again at a higher temperature for about one minute.
- Toss the fried chicken in the Yangnyeom sauce before serving.
