  • 1 cup carrot matchsticks
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1/3 cup sun-dried tomatoes in oil
  • 10 cups low-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • 1 cup ditalini pasta
  • 1/3 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Baby spinach and herbs for garnish

Instructions

  1. Preheat a large pot over medium-high heat and add oil.
  2. Sauté carrots, onion, and garlic for about 3 minutes until fragrant.
  3. Add chicken pieces and sauté until lightly browned.
  4. Stir in tomato paste, sun-dried tomatoes, broth, Italian seasoning, salt, pepper, and red pepper flakes; bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Add pasta; cover and simmer for another 10 minutes.
  7. Stir in cream, Parmesan cheese, and spinach; let sit covered for 5 minutes before serving.
  8. Garnish with parsley or basil.
