  • 1 tablespoon Olive Oil
  • 4 tablespoons Butter
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 Yellow Onion, diced
  • 1 lb Andouille Sausage, sliced
  • 14.5 oz Fire Roasted Diced Tomatoes
  • 1 cup Half and Half (or Milk)
  • 3 cups Chicken Broth
  • 12 oz Bow Tie Pasta
  • 8 oz Sharp Cheddar Cheese, grated
  • 8 oz Pepper Jack Cheese, grated

Instructions

  1. In a large pan or Dutch oven, melt olive oil and butter over medium heat; sauté diced peppers and onion until softened.
  2. Push veggies aside and brown Andouille sausage in the same pan for about 4-5 minutes; add minced garlic during the last minute.
  3. Stir in fire-roasted tomatoes, half-and-half (or milk), chicken broth, and bow tie pasta; ensure pasta is submerged.
  4. Bring to a boil, cover, and reduce heat; simmer for about 15-20 minutes until pasta is tender.
  5. Gradually stir in grated cheeses until melted; serve hot.
