Ingredients
- 12 ounces cooked Italian chicken sausage links
- 1 red bell pepper
- 1 yellow or orange bell pepper
- 1 yellow onion
- 1 cup instant brown rice
- 1 cup low-sodium chicken broth
- 1 can (15 ounces) fire-roasted tomatoes
Instructions
- In a nonstick skillet, heat 1 tablespoon of olive oil over medium-high heat. Add sausage slices and cook until browned, about 5 to 8 minutes. Remove from skillet.
- In the same skillet, add another tablespoon of olive oil and sauté diced bell peppers and onions with seasonings for about 3 minutes.
- Stir in instant brown rice, garlic, and optional red pepper flakes; cook for another 30 seconds.
- Pour in chicken broth and fire-roasted tomatoes; bring to a boil. Reduce heat to low, cover, and simmer for about 5 minutes.
- Stir in the reserved sausage and let stand off heat for an additional 5 minutes before serving.
