- 1 lemon, quartered
- 1 cup celery, finely diced
- 1/2 red onion, finely minced
- 2 teaspoons lemon juice
- 2 cloves garlic, minced
- 1/2 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 1/2 tablespoons fresh dill, chopped (plus more for garnish)
- Salt and pepper to taste
Instructions
- Bring a medium pot of salted water to a boil and add the quartered lemon.
- Cook the shrimp in boiling water for 2-3 minutes until pink and opaque.
- Transfer cooked shrimp to a bowl of ice water to stop cooking; drain and pat dry.
- In a small bowl, mix lemon juice, garlic, mayonnaise, Dijon mustard, dill, salt, and pepper to make the dressing.
- In a larger bowl, combine chilled shrimp with celery and red onion; pour dressing over and toss gently.
- Refrigerate for several hours before serving; garnish with additional dill if desired.
