  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 5 large potatoes, peeled and diced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a skillet over medium heat, brown the ground beef with chopped onion, minced garlic, and diced red bell pepper until cooked through.
  2. In a bowl, whisk together cream of mushroom soup, milk, salt, black pepper, and paprika.
  3. Layer half of the diced potatoes in the slow cooker. Add half of the meat mixture followed by half of the soup mixture. Repeat layers.
  4. Cover and cook on low for 5-6 hours or until potatoes are tender.
  5. Sprinkle shredded cheddar cheese on top and cook for an additional 20 minutes until melted.
