Ingredients
- 6 cups cornbread, cubed
- 6 cups Italian bread, cubed
- 1 stick (½ cup) unsalted butter
- 1 large onion, diced
- 4 stalks celery, diced
- 3 cloves garlic, minced
- 2–3 cups fat-free chicken stock
- 2 large eggs, beaten
- Fresh parsley and seasonings (poultry seasoning, sage, thyme, salt, pepper)
Instructions
- Preheat oven to 400°F (200°C). Spray a 9×13-inch casserole dish with non-stick spray.
- Cube cornbread and Italian bread; dry in the oven for about 10 minutes at 350°F if not stale.
- In a sauté pan, melt butter and cook onion and celery until softened. Add garlic and cook for an additional minute.
- In a large bowl, mix dried breads with sautéed vegetables, chicken stock (start with 2 cups), parsley, herbs, salt, pepper, and beaten eggs. Adjust moisture as needed.
- Transfer mixture to casserole dish; cover with foil and bake for 30 minutes. Remove foil and bake for another 20 minutes until golden brown.
