  • 6 cups cornbread, cubed
  • 6 cups Italian bread, cubed
  • 1 stick (½ cup) unsalted butter
  • 1 large onion, diced
  • 4 stalks celery, diced
  • 3 cloves garlic, minced
  • 23 cups fat-free chicken stock
  • 2 large eggs, beaten
  • Fresh parsley and seasonings (poultry seasoning, sage, thyme, salt, pepper)

Instructions

  1. Preheat oven to 400°F (200°C). Spray a 9×13-inch casserole dish with non-stick spray.
  2. Cube cornbread and Italian bread; dry in the oven for about 10 minutes at 350°F if not stale.
  3. In a sauté pan, melt butter and cook onion and celery until softened. Add garlic and cook for an additional minute.
  4. In a large bowl, mix dried breads with sautéed vegetables, chicken stock (start with 2 cups), parsley, herbs, salt, pepper, and beaten eggs. Adjust moisture as needed.
  5. Transfer mixture to casserole dish; cover with foil and bake for 30 minutes. Remove foil and bake for another 20 minutes until golden brown.
