Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
  2. In one bowl, whisk together flour, pudding mix, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, sugar, softened butter, vanilla extract, lemon extract, fresh lemon juice, vegetable oil, and Greek yogurt until combined.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined; fold in lemon zest.
  5. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for 5-10 minutes before transferring it to a wire rack to cool completely.
