  • 1 pound 90% lean ground beef
  • 1 (15-ounce) can black beans
  • 1 cup salsa
  • 9.25-ounce bag corn chips (Doritos or Fritos)
  • 2 cups shredded cheddar cheese
  • Taco seasoning
  • 2 tablespoons canola oil
  • 1 large onion, diced
  • 3 cloves garlic, minced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat canola oil over medium heat and sauté diced onion for 5 minutes. Add minced garlic and cook for an additional minute.
  3. Add ground beef to the skillet and brown until cooked through; drain excess fat if necessary. Stir in taco seasoning, black beans, and salsa; cook for another 3 minutes.
  4. Grease a 9×13-inch baking dish. Layer half of the corn chips at the bottom, followed by half of the beef mixture and half of the cheese. Repeat layers.
  5. Bake in preheated oven for 15-20 minutes until cheese is melted and bubbly.
